I have been keeping an eye on my protein & fiber intake lately and this protein packed version of my baked oatmeal is my favorite version yet!

This packs 15g of protein per square and 5g of fiber. And that’s just in one square! Go for two squares, and you’re still under 600 calories but now at 30g of protein. For a chocolatey TREAT. Cannot beat it!!!

This makes for a perfect breakfast meal prep – just warm and go. But it’s also a DELICIOUS protein packed dessert if you’re craving chocolate at night!

You can eat this on its own, or warm then drizzle with a little almond milk or even add a scoop of vanilla ice cream. UNREAL I tell you!

The texture is thick and fluffy and has a little crunch with plenty of chocolate. It’s the perfect combo with that rich velvety frosting drizzle on top.

Speaking of the drizzle, it’s super macro friendly on its own – adding even more protein to each bite! Tastes like chocolate peanut butter frosting. But is made with clean simple ingredients and takes just a minute to whip up. You’re gonna be making it again and again for muffins, pancakes, apple dip, and more!

Chocolate Crunch Protein Baked Oats with Chocolate Peanut Butter Drizzle

Ingredients

For the Baked Oats

  • 2.5 cups rolled oats
  • 2 scoops vanilla protein powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3 eggs
  • 1 cup almond milk (any milk works!)
  • 1/4 cup honey or maple syrup
  • 1/4 cup mashed banana or applesauce about 1/2 medium banana, mashed
  • 1 tsp vanilla extract
  • 1/3 cup chocolate chips
  • 1/3 cup chopped pecans
  • 1/3 cup shredded coconut

For the Drizzle

  • 3 tbsp almond milk
  • 1 tbsp maple syrup
  • 2 tbsp chocolate chips
  • 1 scoop vanilla protein powder
  • 1/4 cup PB fit powdered peanut butter regular peanut butter would work too!

Instructions

  • Preheat the oven to 350ºF.  Line an 8 or 9” square baking dish with parchment paper or grease well and set aside.
  • In a large bowl, combine the dry ingredients:  oats, protein powder, baking powder, salt.  Add the eggs, milk, honey, mashed banana, and vanilla and stir to combine well.  Stir in the chocolate chips, chopped pecans, and shredded coconut until evenly distributed.
  • Pour the mixture into the lined baking dish, and bake for 35 minutes or until light golden on top and around the edges, and firm in the center.  
  • While the oatmeal cools, make the drizzle.  Add the almond milk, maple syrup and chocolate chips to a small bowl or saucepan and warm in the microwave or on the stovetop until melted.  Stir in the protein powder and peanut butter powder until nice and smooth.
  • Drizzle the top off the oatmeal with the chocolate peanut butter drizzle then slice into 9 squares.
  • Store leftovers in the fridge!  We love this served warm or at room temp.  ENJOY!
