You guys know I’m all about the quick & easy weeknight meal and this one ticks all of the flavor boxes too! Tastes like taco meat jazzed up with some extra veggies and loaded with all of the taco fixings. Try it over rice, scooped with tortilla chips, or served up in a bowl all on its own!

I truly cannot tell you (& probably wouldn’t want to admit) how many times dinnertime has arrived and I’ve had zero plans. Life is wild lately! We are go-go-go all day, I cook every meal at home and it’s hard to keep up sometimes. But I always feel so proud when I get a good balanced meal on the table – and this is absolutely one of those meals I can whip up in no time flat!

Bonus points for all of the incredible leftovers this makes! And seriously tastes even better the next day.

I use mild taco seasoning for this dish and it’s just that – mild heat. Perfect for the kids then I can just add hot sauce to mine because I like a little fire in my food haha. Great base you can serve over whatever, with whatever – and top however. Crowd pleaser at its finest! Cannot wait for you to try!

Easy Stovetop Taco Chili

Taco meat gone chili style with extra veggies, and loaded up with all of your favorite taco fixings!

Ingredients

  • 1 tbsp avocado oil
  • 2 lbs grass fed ground beef
  • 2 packets taco seasoning see notes
  • 1 medium white onion, diced
  • 1 red or green bell pepper, diced
  • 1 can (14.5 oz) petite fire roasted diced tomatoes
  • 1 can (15oz) tomato sauce
  • 1 can (4 oz) diced green chiles
  • 2 cloves garlic, minced
  • 16 oz frozen fire roasted sweet potatoes see notes

Optional Garnishes

  • sour cream, chopped green or red onion, sliced black olives, avocado, guacamole, chopped cilantro, hot sauce, shredded cheddar *whatever you love on a taco!

Instructions

Stovetop Directions

  • Heat the avocado oil in a large skillet or Dutch oven over medium to medium high heat. Add the ground beef and taco seasoning, cooking until the meat is browned and crumbled into small pieces, about 5 to 7 minutes.
  • Stir in the diced onion and bell pepper, and continue to sauté for 2 to 3 minutes or until the vegetables are just softened.
  • Stir in the diced tomatoes, tomato sauce, green chiles, garlic, and sweet potatoes. Bring the mixture to a simmer and continue to cook, stirring occasionally, for 10 minutes or until the sweet potatoes are tender.
  • Serve hot with your choice of garnishes & enjoy! (Instant Pot & slow cooker instructions in the notes below)

Notes

  • I use the Siete brand taco seasoning packets in the “mild” flavor, then add hot sauce when serving.  Use any taco seasoning you love!  To make your own, try my recipe found in my Beef Fajita Burrito Bowls HERE
  • For the sweet potatoes, I use a bag of frozen fire roasted sweet potato chunks by Cascadian Farms – I find them at Sprouts.  If you can find those, feel free to use fresh uncooked sweet potatoes.  Use 2 small to medium sweet potatoes and cube them into 1″ pieces.
  • INSTANT POT DIRECTIONS
    • Set the Instant Pot to “saute” mode.  Add the avocado oil.  Once hot, add the ground beef and cook until browned.  Hit “cancel” to turn off the heat, then add the remaining ingredients and stir.  Lock the lid on top and set to “sealing”.  Cook on high pressure for 10 minutes and then allow the pressure to naturally release for 10 more minutes.  Release any remaining pressure naturally.  Serve hot with garnishes & enjoy!
  • SLOW COOKER DIRECTIONS
    • In a large skillet, cook the ground beef over medium to medium high heat until browned.  Add to the slow cooker and stir in the remaining ingredients.  Set to cook on “low” for 6 hours or “high” for 2-3 hours.  Serve hot with garnishes & enjoy!
  • You can absolutely make this less meaty with just one pound of ground beef!
