Preheat the oven to 350ºF. Line an 8 or 9” square baking dish with parchment paper or grease well and set aside.
In a large bowl, combine the dry ingredients: oats, protein powder, baking powder, salt. Add the eggs, milk, honey, mashed banana, and vanilla and stir to combine well. Stir in the chocolate chips, chopped pecans, and shredded coconut until evenly distributed.
Pour the mixture into the lined baking dish, and bake for 35 minutes or until light golden on top and around the edges, and firm in the center.
While the oatmeal cools, make the drizzle. Add the almond milk, maple syrup and chocolate chips to a small bowl or saucepan and warm in the microwave or on the stovetop until melted. Stir in the protein powder and peanut butter powder until nice and smooth.
Drizzle the top off the oatmeal with the chocolate peanut butter drizzle then slice into 9 squares.
Store leftovers in the fridge! We love this served warm or at room temp. ENJOY!
