Sourdough Discard Tortillas

Easy homemade sourdough tortillas with a neutral flavor and perfect texture for all of your tortilla needs!

Ingredients

  • 1/2 cup (130g) sourdough discard ("unfed" starter)
  • 1/4 cup (45g) avocado oil
  • 1/3 cup (60g) water
  • 1 2/3 cup (240g) organic unbleached all purpose flour
  • 1/3 tsp salt

Instructions

  • Mix the discard, oil, and water in a bowl.
  • Add the flour & salt, and mix the dough until all of the flour is fully incorporated. I use a kneading motion to really work it into a cohesive ball of dough.
  • Cover the bowl with a towel and set aside to rest for 30 minutes.
  • Lightly flour a surface, then cut the dough into 8-10 portions and roll out each into a ball.
  • Use a rolling pin to roll out each ball as thin as you can without breaking - until almost paper thin! Use parchment paper to separate your rolled out tortillas if you're not cooking them as you go.
  • Heat an ungreased skillet to medium high, then add the tortillas one at a time. Cook each side for up to 1 minute, or until it puffs up and has light golden spots. Then flip, and cook the other side.
  • Store in an airtight container in the fridge, and warm before serving so they're more pliable while filling. ENJOY!
