Ingredients
1/2cup(130g) sourdough discard("unfed" starter)
1/4cup(45g) avocado oil
1/3cup(60g) water
1 2/3cup(240g) organic unbleached all purpose flour
1/3tspsalt
Instructions
Mix the discard, oil, and water in a bowl.
Add the flour & salt, and mix the dough until all of the flour is fully incorporated. I use a kneading motion to really work it into a cohesive ball of dough.
Cover the bowl with a towel and set aside to rest for 30 minutes.
Lightly flour a surface, then cut the dough into 8-10 portions and roll out each into a ball.
Use a rolling pin to roll out each ball as thin as you can without breaking - until almost paper thin! Use parchment paper to separate your rolled out tortillas if you're not cooking them as you go.
Heat an ungreased skillet to medium high, then add the tortillas one at a time. Cook each side for up to 1 minute, or until it puffs up and has light golden spots. Then flip, and cook the other side.
Store in an airtight container in the fridge, and warm before serving so they're more pliable while filling. ENJOY!
