Frosted Soft & Chewy Ginger Spice Sugar Cookies
Soft & chewy spiced sugar cookies with an easy go-to frosting to spread on top for the perfect holiday treat!

For the Cookies
- 2 1/4 cups gluten free flour
- 2 tsp dried ginger
- 1 tsp cinnamon
- 1/4 tsp clove
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 tsp baking soda
- 3/4 cup butter softened
- 1 1/4 cups light brown sugar
- 1 egg
- 2 tbsp maple syrup
For the Frosting
- 1/4 cup butter softened
- 1 1/2 cups powdered sugar
- 3 tbsp milk of choice
- 1 tsp vanilla extract
For the Cookies
Preheat the oven to 350ºF and line two baking sheets with parchment paper (or just one if cooking half a batch at a time).
To a bowl or stand mixer, add the softened butter, sugar, egg, and maple syrup and mix until smooth.
Add the flour, ginger, cinnamon, clove, nutmeg, salt, and baking soda, and stir until completely mixed.
Scoop rounds of dough onto the parchment lined baking sheet and press down slightly with your fingers to flatten just a little (or leave them to bake in rounds if you like more thickness).
Transfer to the oven and bake for 12 minutes or until just set. Let the cookies cool on the baking sheet for a few minutes to firm up before transfering to a cooling rack.
For the Frosting
While the cookies are baking, use a fork or whisk attachment on mixer to whip the butter.
Add the powdered sugar until smooth.
Add the milk & vanilla and whip until smooth and creamy.
Add the room temperature frosting to the top of each cookie, smoothing the top with a butter knife. Enjoy!
- The cookie dough can be made ahead & baked any time! Just store in the fridge until ready to bake.
- The frosting can also be made ahead - just bring to room temperature before using.
