Servings: 12 dippers
Calories: 62kcal
- 1 lb Boneless, Skinless Chicken Thighs
- 1/4 cup Pepperoni chopped
- 1 Green Bell Pepper sliced thin and diced
- 1/2 Red Onion diced
- Pinch Red Pepper Flakes
- 2 tsp Garlic minced
- 1/2 tsp Dried Oregano
- 1/2 tsp Dried Basil (or 2 tbsp chopped fresh)
- 1/2 tsp Garlic Powder
- Olive Oil for cooking
- Pizza Sauce or Ranch for dipping *double check ingredients if making Whole30 compliant
Preheat the oven to 400ºF. Line a baking sheet with parchment paper or lightly grease with olive oil.
Pat the chicken dry with paper towels, then place in a blender or food processor. Pulse until the meat is broken up into small pieces and holds together - almost like ground chicken.
Add the remaining ingredients (peppers, onion, garlic, spices) and pulse for a minute or two, until everything is combined.
Use a cookie dough scooper to scoop heaping tablespoons full of the mixture onto the lined baking sheet. You can leave them as is, or use your hands to flatten them a bit into a shape that's easy to dip into pizza sauce.
Brush the tops of the dippers with a light layer of olive oil, or use a sprayer to lightly coat them.
Transfer to the oven, and bake for 25 minutes. Broil for 3-5 minutes at the end to brown the tops.
Serve hot, dipped in pizza sauce or ranch!
- Substitute ground chicken if you’d like. Go for a darker meat with some fat to it so the dippers aren’t too dry and hold together better. Skip the food processor and combine your ingredients in a large bowl before scooping and flattening into “dippers”.
- Can’t find Whole30 compliant pepperoni? Feel free to leave it out if you’re currently doing a round of Whole30, and save it for your “food freedom”. We love the Applegate and Wellshire brands for pepperoni but theirs aren’t compliant even though the ingredients are very clean.
- PIZZA SAUCE: Rao's, Mezzetti's, Cucina Antica, and the Whole Foods 365 brand make great sugar free options!
- RANCH: We love the Primal Kitchen Foods - we buy online HERE in a two pack.
