Bacon Wrapped Scallops

These Bacon Wrapped Scallops take minutes to prep but look and taste SO fancy. They are naturally paleo friendly with an easy keto option (just omit the maple syrup) and have so much rich, smoky flavor. Try them as an appetizer or a main dish any night!

Ingredients

  • 1 lb sea scallops (16 scallops)
  • 8 slices bacon
  • 1/4 cup maple syrup omit for keto and Whole30
  • 1/4 cup coconut aminos
  • 1/4 tsp dried Italian herb blend
  • 1/4 tsp smoked paprika
  • 1/4 tsp garlic powder
  • chopped fresh parsley optional garnish

Instructions

  • Preheat the broiler- I set mine to 550ºF, but a high or low broil will work fine, whatever you have on your oven. Line a rimmed baking sheet with parchment paper for easier cleanup, or grease the baking sheet lightly with avocado oil.
  • Cut the strips of bacon in half crosswise so you have half-length pieces. Pat the scallops dry, then wrap each scallop with a piece of bacon. Secure through the middle with a toothpick to keep the bacon in place. Arrange the scallops on the lined baking sheet with about an inch between each one.
  • In a small bowl, whisk the maple syrup (if using), coconut aminos, and spices. Drizzle the sauce evenly over top of the wrapped scallops, or use a brush to slather on.
  • Transfer to the oven and broil for 15 minutes, or until the bacon is crispy. Garnish with chopped fresh parsley and serve hot. Enjoy!

Notes
