Chocolate Zucchini Muffins

- 1 1/4 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp sea salt
- 3 eggs
- 1 cup grated zucchini (about 2 medium zucchini)
- 1/4 cup pure maple syrup
- 2 tbsp coconut oil melted
- chocolate chips (I use the brand "Enjoy Life")
Preheat the oven to 350ºF.
In a large bowl, add the dry ingredients followed by the wet ingredients. Mix until combined.
Line a 12-cup muffin tin with paper cups, and fill about 1/2 to 2/3 of the way with the mixture.
Bake for 18 to 20 minutes, or until a toothpick comes out clean.
