Chocolate Zucchini Muffins

Ingredients

  • 1 1/4 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 3 eggs
  • 1 cup grated zucchini (about 2 medium zucchini)
  • 1/4 cup pure maple syrup
  • 2 tbsp coconut oil melted
  • chocolate chips (I use the brand "Enjoy Life")

Instructions

  • Preheat the oven to 350ºF. 
  • In a large bowl, add the dry ingredients followed by the wet ingredients.  Mix until combined.
  • Line a 12-cup muffin tin with paper cups, and fill about 1/2 to 2/3 of the way with the mixture.
  • Bake for 18 to 20 minutes, or until a toothpick comes out clean.
  • Let cool & enjoy!
