Hearty Beef & Bacon Stew

- 4 slices raw bacon cut into 1/4" strips
- 4 large carrots cut into chunks
- 3 celery stalks, chopped
- 1 medium-large russet potato, cubed into bite-sized pieces
- 1/2 white onion, chopped
- 1 1/2 lbs beef stew meat, cut into bite-sized pieces
- 2 tsp garlic, minced
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1/2 tsp dried thyme
- 1/2 tsp dried rosemary
- 24 oz beef bone broth
- bay leaf
- 1 tbsp arrowroot flour
In a large skillet over medium heat, cook the bacon pieces until browned.
While the bacon cooks, add the remaining ingredients to a slow cooker. Stir in the bacon and its fat, then add the bay leaf.
Cook on "low" for 6 to 8 hours.
Remove the bay leaf, and scoop out a ladleful of the stew liquid into a small bowl. Add the arrowroot flour & whisk until smooth. Pour it back into the slow cooker, stir well, and continue to cook for 20-30 minutes or until thickened.
Serve hot & store leftovers in the refrigerator. Enjoy!
