Hearty Beef & Bacon Stew

Ingredients

  • 4 slices raw bacon cut into 1/4" strips
  • 4 large carrots cut into chunks
  • 3 celery stalks, chopped
  • 1 medium-large russet potato, cubed into bite-sized pieces
  • 1/2 white onion, chopped
  • 1 1/2 lbs beef stew meat, cut into bite-sized pieces
  • 2 tsp garlic, minced
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 24 oz beef bone broth
  • bay leaf
  • 1 tbsp arrowroot flour

Instructions

  • In a large skillet over medium heat, cook the bacon pieces until browned.
  • While the bacon cooks, add the remaining ingredients to a slow cooker.  Stir in the bacon and its fat, then add the bay leaf.
  • Cook on "low" for 6 to 8 hours.
  • Remove the bay leaf, and scoop out a ladleful of the stew liquid into a small bowl.  Add the arrowroot flour & whisk until smooth.  Pour it back into the slow cooker, stir well, and continue to cook for 20-30 minutes or until thickened.
  • Serve hot & store leftovers in the refrigerator.  Enjoy!
