Cinnamon Sweet Potato Protein Bread ft. Vital Proteins Collagen Peptides

- 1/2 cup sweet potato flesh (boiled, baked, or steamed)
- 4 eggs
- 1/2 cup Vital Proteins Collagen Peptides
- 1/4 cup coconut flour
- 1/4 cup grass-fed butter, melted
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1/2 tsp sea salt
- 1/2 tsp baking soda
- 1 tbsp coconut sugar (optional for topping)
Preheat the oven to 350ºF. Line a loaf pan with parchment paper and set aside. You can brush the parchment with melted butter for extra non-stick action.
Place all of the ingredients, except for the coconut sugar (if you are using it), in a food processor or blender and pulse until a smooth batter forms.
Transfer into the lined pan, sprinkle with coconut sugar, and bake for 30 minutes or until cooked through.
Remove from the oven & allow to cool in the pan.
Pull the loaf out by the edges of the parchment, and slice to serve.
Store leftovers covered in the refrigerator.
- The batter may look thin, or as if there's just "not enough" when you pour it inot the pan-- but have faith! It will expand and rise as it bakes.
- This won't rise as high as a typical bread, but the taste & amazing ingredients outweigh that small downside!
