Whole30 Round 2: Update & Grocery Haul!

As many of you may have seen over on Instagram.... I'm embarking on my second Whole30 starting January 1st!  I'm really excited this time around, since there are SO many people starting at the same time.  That means lots of people sharing recipes, motivation, "what I ate" posts, etc. on social media sites, which is going to be so helpful to keep me going!

Creamy Spiced Butternut Squash Soup {Paleo}

Since receiving a new camera for my Master's graduation, I have been so much happier with my blog photos.  My older recipes, though still awesome in flavor, have sad old pictures taken with an old iPhone... not the best for selling the beauty of a dish!

I decided to slowly update some of my older posts that might have been missed by some of my newer readers, or skipped due to their not-so-pretty pictures.  Here's an old favorite of mine that has gotten great reviews... Butternut Squash Soup!

Whole30 Eats: Packaged Protein

Many people embark on a Whole30 program challenge at this time of year; and others commit to cleaning up their diet since the holidays are coming to a close.  Whether you are completing a Whole30 or not, all of these meats are great options for anyone who follows a "clean eating" or Paleo diet.

Protein can be time-consuming to prepare, but is necessary to have on hand for quick lunches and dinners.  I love that each of these products can be found at a variety of stores for a good value (especially Costco!)... but my favorite thing is how much they simplify meal prepping.  Because let's all admit it~ while it's fun to make things from scratch... sometimes it's just not realistic!

Friday Five: Winter Skincare Favorites

Chicken Enchilada Stuffed Bell Peppers

Stuffed bell peppers make a super versatile dish, perfect for Paleo eaters.  Mix up whatever filling you'd like, with meat & vegetables of your choice, cut open some peppers, and bake 'em.  

For this recipe, I chose to go with an "enchilada" flavor profile.  I added the spices I would use for a red enchilada sauce, then combined it with tomatoes, green bell peppers, and cauliflower rice to bulk it up a bit.  I decided to shred up rotisserie chicken for this dish since we had one on hand- but you could easily grill up your own chicken for shredding.  

German Chocolate Cake Bars (Paleo)

I recently asked my friends over on Instagram what they'd like to see here on the blog in the near future, and I got a couple of requests for Paleo-friendly holiday treats that could be packaged up for loved ones.  Since anything "German chocolate" is a favorite around here, I decided to come up with a bar version that could easily be sliced, plated, and given away.

Paleo Biscuits & Gravy

I was a pretty picky eater growing up.  For many foods I would decide that I "didn't like that", without ever even trying it.  Biscuits & gravy was one of those dishes I decided sounded gross and did not want to try....

Fast forward 15 years & I'm living with the man of my dreams, whose all-time favorite pre-Paleo breakfast was biscuits & gravy.  After creating amazing Paleo Drop Biscuits, a "biscuits & gravy" dish was the next logical step.  So I made it, had Dathan do all of the taste testing, ate it begrudgingly..... and fell in love.

Coconut Lip Scrub

Winter weather is my favorite, but my skin doesn't always feel the same way.  My usual normal-combo skin goes way too dry in the fall & winter, and my lips can easily do the same if I don't keep them exfoliated & super-hydrated.  

My lips were starting to feel a little flaky the other day (after not enough lip balm & too much matte lipstick), so I came home & had the urge to create my own exfoliator.

Just two simple ingredients are all you need, and you are on your way to smooth, hydrated lips.  Coconut sugar makes the perfect light exfoliator to get rid of dead skin cells, while the coconut oil leaves a light coat of moisture behind to soothe irritated skin.

Crockpot Caramel Apple Squash

 The fall & winter seasons always put me in the mood for crockpot recipes.  And although I love a good slow cooker chili or soup, I decided to switch things up a little by creating a sweet dish in the crockpot.

I wanted to use some cubed butternut squash in a new and festive way, and this is what I came up with.  The butternut squash is slow cooked to sweet perfection, and perfectly balanced by the slightly tart flavor of the apples.  The mixture of coconut sugar & butter simmers into a caramel-like texture that almost reminds me of an apple pie filling.  

Paleo Drop Biscuits

 Fact: Everyone loves biscuits.  Right?  I mean, even those who might say they don't- it's probably because they think they shouldn't; because biscuits aren't exactly healthy.  But deep down.... they love biscuits.

One night last week, my "little" brother sent me a link to the website for "Edoughble" cookie dough (here)- and I wanted to eat it all!  So, instead of ordering every single flavor for $8+ per cup, I decided to make my own... & make it Paleo  :)

I'm pretty sure everyone loves to chow down on raw cookie dough~ myself included.  However, I always feel a tinge of guilt knowing that we're not technically "supposed to" consume raw egg.  This recipe is guilt-less:  no risk of salmonella, and Paleo-friendly ingredients.

Honey Dijon Pork Chops

So the photography on this recipe is not the greatest (I took the picture with my iPhone).  BUT-  I could not resist a quick picture so that I could share these pork chops with you guys!

The recipe is similar to my Perfect Pork Chops post, which has become pretty popular here on my blog.  This one adds a burst of flavor by glazing the meat before it's popped into the oven.

Get Ready With Me: Fall Edition! (VIDEO)

I posted a new YouTube video!  This time it's not Paleo or food related at all... but is a sneak peek into my girly side.  ;)

After a few of you asked, and I worked up the nerve, I decided to film a "Get Ready With Me" video where I show you how I achieve my simple fall makeup look.  While makeup is not nearly as important to me as food-- I do love it, and am always spending my extra pennies on the newest products that catch my eye at Nordstrom or Sephora.  

Cinnamon Apple Coffee Cake Muffins

Coffee cake has been on my list of Paleo goodies to create, and I finally did it!  I love the sweet, warm, buttery flavors in coffee cake- and felt like this would be the perfect treat (or breakfast) for the fall season.  

Of course the thought of making an actual loaf or cake is always frightening to me for some reason, as I have mentioned before.  So, I decided to opt for the less messy, easier to bake version:  ...muffins!  I always feel like muffins are so much more convenient, and minimize the stress factor since you don't have to worry about slicing them into pretty pieces.  What makes these muffins even easier are the sweet little cups I baked them in!

What I Bought: Target for Fall!

I decided to film a quick & casual video for you guys (On my living room floor, with my dog.  And cat.) to share my recent "haul" from Target!

If there's one place I cannot resist a little overshopping... it's Target.  I love their home stuff, always find some good clothes, and always find time to browse the makeup aisles.  They are always impressing me with their new natural brands, too.

This time I stocked up on a few natural cleaning supplies that I cannot live without (because I have an obsession with cleaning supplies), and came home with a shameful amount of shoes.  I also found one home decor item, and two new beauty products that I've used every day since!

Friday Five: Paleo Side Dishes

Forget about the rice, pasta, bread, quinoa, etc... These sides are filling, delicious, and simple to prepare.  Not to mention amazing for you!

If you're one of those who likes to go for some type of meat for dinner (like my Perfect Pork ChopsSmoky-Sweet Grilled Chicken, or Classic Paleo Meatloaf) served up with a couple of sides, these dishes are the perfect solution to keep dinner exciting.

Cinnamon Toast Coffee Creamer

I've been on a bit of a breakfast-posting spree lately, which I planned on ending today... until I heard that it's National Coffee Day!  So I'm back with another morning treat, that can actually be enjoyed any time you're needing a little pick me up or craving something sweet!

My Vanilla Coconut Coffee Creamer has been a big hit here on my blog, probably because it contains minimal ingredients, is Paleo-friendly, & is embarrassingly easy to make.  In honor of National Coffee Day, I decided to create a new (and even more delicious) recipe- that still ticks all of those boxes.

Easy Pumpkin Pancakes (Paleo)

I know not everyone goes pumpkin crazy when fall hits.... but I do!  So I hope you don't mind one more pumpkin recipe  :)

This recipe is my pumpkin-fied version of my Three-Ingredient Paleo Pancakes, which are constantly in rotation for "breakfast for dinner" at our house.  If you're not a pumpkin fan, I highly recommend that recipe- which uses bananas!

Sausage & Sweet Potato Breakfast Scramble

I love breakfast scrambles with all different flavor combinations~ but this has got to be one of my favorites.  The combination of the super savory breakfast sausage, mixed with a bite of tender sweet potato has "warm, fall flavor" written all over it.

To me, this makes the perfect Sunday morning breakfast.  It fills up the house with amazing smells, and is hearty enough to keep everyone full until lunch.  I love how the sweet potato makes it seem more indulgent & filling, while providing you with clean, healthy energy to fuel your day.

Functional Fitness: Making it a Priority

I decided to do something a little different today, instead of my typical Paleo recipe post.    Living a healthy, balanced lifestyle goes beyond food (although that is a huge part of it), so today I'm talking about exercise.

Getting in workouts has always been a bit of a struggle for me.  In the past, I tried using the "I live an active lifestyle" line to compensate for the fact that I simply was not putting in the necessary effort to make workouts a priority.  I always felt like I just did not have the time, so I put it on the back burner.

Fortunately, the amount of passion I have for food & diet is mirrored by my boyfriend Dathan's passion for fitness & training.  He has inspired me to make exercise a habit- and helped me find a balance so that I don't feel overwhelmed.

Pumpkin Pie Bars with Creamy Vanilla Frosting (Paleo)

I know it's not "technically" fall yet.... but can we pretend?  I've already been burning my favorite fall candles, making dinners in the crockpot, and enjoying all those other festive things us simple folks do when the leaves change.  Like watching football & baking/eating pumpkin pie bars  :)

Similar to most, I love pumpkin everything.  This weekend I was craving pumpkin bread, but decided that I did not want the hassle of baking in a loaf pan, wondering if it would turn out, and praying that it held up for slicing.  Bars sounded much more convenient, and I couldn't help but think of the ease of slicing through a piece of pumpkin pie.  

So that was my inspiration-- pumpkin pie, but minus the extra steps caused by a crust, and sliced into single-serving size bars.  The frosting was just a (delicious) afterthought  ;)

Friday Five: Game-Day Recipes

In honor of football season's recent start, I have decided to focus my Friday Five post on recipes that are perfect for feeding a crowd of football fans (while keeping it Paleo).  & Don't worry~ with big flavors & hearty ingredients- no one will be thinking "health-food" while they're enjoying the game.

You might notice a trend of finger-foods & minimal hands-on cooking time.  That's because football is for enjoying~ not ignoring while you're making all of the food!  Enjoy the season, & Go Niners!  ;)

Simple Squares Giveaway!

Vegetable Noodles: Tips & How-to

Hi guys!

Life has been crazy with a new town, new job, and lots of new responsibilities.  But, I am finally here with a new video.  As promised, I am going to share with you how I make quick, easy, and inexpensive vegetable noodles.

In the video I show how to use the "Veggetti" vegetable spiralizer to make noodles from zucchini and sweet potato.  The Veggetti can be found on Amazon here:  Veggetti Spiralizer.  I have also seen them at Bed, Bath, & Beyond~ so check your local stores!

While zucchini and yellow squash are my favorite veggies to spiralize, there are tons of other options too!  Try carrots or cucumber as a raw noodle on salads or as a cold "pasta".  The options are endless, and you will be amazed at how veggie noodles can bulk up your meals!

Thai Coconut Curry Chicken

Here's another one-dish meal that I love.  I know when some (aka me 2 years ago) think "curry", they think of a weird spicy dish that smells funky.  But Thai curry is so much different~ I promise!

I first made Thai coconut curry when I had my boyfriend over for dinner when we had just started dating.  I followed a recipe I found online and simplified it to my liking.  & After realizing that "curry" could mean a blend of delicious, aromatic spices blended into a sauce with fresh meat and tender vegetables- with coconut milk- I was sold.

Paleo Pizza Bites

With football season starting up, I've had "game-day" foods on my mind.  I'm all about taking familiar comfort foods that everyone loves, & turning them Paleo-friendly. & That was the inspiration for this recipe!

Everyone loves pizza, right?  Maybe some prefer certain toppings over others.. but pretty much everyone enjoys pizza.  So switch up the "topping" ingredients to suite your taste buds~ and try out these Paleo Pizza Bites the next time you're in need of a healthy (yet crazy delicious) finger food.  I went for the 'combination' flavor since that's my favorite, but I would recommend trying out pepperoni, meat lovers, or Hawaiian!

Pineapple Upside Down Cake (Paleo)

In my last couple of weeks before starting work, I have been on a roll with the whole recipe creating thing.  

This past weekend, we were having a sweet tooth moment~ with no desserts or treats on hand, and no Enjoy Life chocolate chips for cookie-making :(  So, I got creative with what we had in the cupboards, and experimented with a recipe I had been thinking of for some time now.... Pineapple Upside Down Cake.

I used frozen pineapple pieces (these were Trader Joe's 'Pineapple Tid-Bits'), but fresh pineapple would be amazing too.  The ingredients are pretty simple, but the flavors in this are buttery, sweet, fresh, and amazing.  I added a little unsweetened coconut to give some extra texture & flavor, and it goes perfectly with the pineapple (if I do say so myself!)

Get To Know Me Video!

Hi Guys!

I decided to film a little "Get to Know Me" video for my YouTube channel!  I figured since many of you have become my blog friends, and have met me just through reading my recipes~ it might be a fun way to see a little more of my personality, and learn a few things about me.

Fresh Pico de Gallo

Here's a fresh summer staple I love to toss together.  Pico de Gallo is perfect for dipping~ try plantain chips, bell pepper wedges, cucumber slices (my favorite), or gluten free corn tortilla chips if you'd like!  The lime juice gives it an extra zesty kick.

This fresh salsa is also awesome over a salad or grilled chicken, fish, or steak.  Try it over my Grilled Mahi Mahi, or toss in some cooked shrimp for an easy ceviche.  You could also add a summer fruit of your choice (mango, pineapple, peach, nectarine, etc.) to give it a twist!

Slow Cooker Pork Tenderloin with Apple & Onion

I'm back with another simple dinner recipe!  This one is perfect to cook while you're away at work, or when you're having guests over and don't want to spend all of your time in the kitchen.  Just prep a few ingredients, and the slow cooker does all of the work for you!

Chocolate Chip Trail Mix Cookies (Paleo)

I created these cookies in honor of my dad, and first made them for Father's Day.  My dad has never been a big dessert guy, but has always been a fan of oatmeal raisin cookies.  I'd have to agree with him... that oatmeal texture always gives such a soft, chewy bite to a cookie... So, I decided to find a way to mimic that "oatmeal element"~ but in a Paleo friendly way (gluten & grain free).

These cookies have the perfect soft/chewy texture that every good oatmeal cookie should.  I swapped out the oats for shredded unsweetened coconut, and added some trail mix-inspired ingredients (chocolate, nuts, raisins) to boost the flavor.  The addition of cinnamon & nutmeg really pushes these cookies over the edge, and gives them a warm, sweet flavor that is perfectly balanced by the sea salt.

Beef Enchilada Bake

I love making "one-dish" meals like chili, meatloaf, etc.  They have become a major favorite around my house since you can get your meat & veggies all in one flavorful bite, while saving yourself the work of too many dishes!

This new creation of mine was inspired by my love of one-dish meals, and the fact that I wanted Mexican food (but Paleo style!).  I think that Mexican foods are some of the toughest to "Paleo-fy", since most are wrapped in a tortilla & served with rice and beans~ so not quite Paleo-friendly.

Broccoli Apple Slaw | PALEO, Whole30

Updating this old favorite with some fresh new photography, to show off just how delicious it really is!  This has remained one of our go-to side dishes year round (although it's extra perfect in the spring & summer!)

We love the balance of fresh, crisp fruits and veggies with the creamy, tangy dressing.  Recipe has been updated with the option of sliced almonds OR chopped walnuts as a mix-in:  we love them both!

What I Bought: Trader Joe's IV (Paleo-Friendly)

I'm back with another Trader Joe's grocery haul- where I show you what I've picked up on my most recent shopping trip.  While all of the items I purchased are Paleo-friendly, I will note in the descriptions whether or not they are compliant for a Whole30 challenge.  I'll also give you a little more info as to why I pick up certain things, & what I plan on using them for... so look out for recipe links within the post!

All Whole30 compliant, besides the bacon.

  • Fully Cooked Uncured Bacon~ This is a staple at our home, so we always keep it on hand.  The fact that you can just microwave it for a few seconds makes it really convenient for breakfast.  It's also great chopped up & added to other recipes.  Most bacon is not Whole30 friendly, but if you're looking for one- make sure there are no added sugars.  I would check Whole Foods!
  • Organic Free Range Chicken Breast Tenders & Thighs~ I love the flavor & texture of chicken thighs, but I like to mix them with breast tenders in most dishes so that I have some leaner cuts of meat mixed in.  Chicken curry is a favorite dish of mine, as is Shredded Salsa Chicken in the crockpot (recipe here).  We like to use chicken in our stir fry too!
  • Thinly Sliced Beef Sirloin~ We used this for steak fajita salads, and really loved it!  It was a new cut of meat for me, but definitely a good one for stir fry, taco salads, stews, or curries.  (See my fajita salad in this post.)
  • Organic Grass Fed Ground Beef~ Good quality at a great price!  I use this for Tomato Basil Meat SauceAll-American Crockpot Chili, and Classic Paleo Meatloaf (one of my favorites!).  

Paleo Breakfast Burrito

Instead of a typical Friday Five post, I'm going to give you five reasons why you need to try this breakfast burrito:

  1. It's quick,
  2. It's easy,
  3. It's delicious,
  4. It's a burrito,
  5. And there's bacon in it.

If those aren't reasons enough, then there's no convincing you!

Baked Blueberry Nut Bars

Having a little summer break before I start my new job has really been nice.  I can't wait to start working & putting everything I've learned into action (while learning lots more!), but I'm also enjoying my time off & trying to allow myself to kick back a little.  I can be pretty 'Type A', so it's not always easy for me to appreciate my down time.  

Grilled Mahi Mahi

I found some frozen wild caught Mahi Mahi fillets at Costco recently for a really great price!  If you don't mind buying frozen (I don't) and you don't feel like breaking the bank on salmon or wild shrimp- give Mahi Mahi a shot.  It has a really light, non-fishy flavor that can fit in with pretty much any flavor profile.  It's also really hearty & easy to cook on the stovetop.

Happy 4th of July + Gluten Free Fruit Pizza

 Happy 4th of July everyone!!!  I thought I would stop by & wish you all a happy & safe holiday weekend, and share a few things with you guys.  I took a few pictures throughout my day yesterday, and also have a quick & easy recipe to share for my fruit pizza.  

It's not a Paleo recipe, but it IS gluten-free, and absolutely delicious!  I love bringing it to parties, as it's a total crowd pleaser.

This was the first holiday my boyfriend (Dathan) & I spent together in our new town, and I loved it!  It's so family-oriented and festive here, and I love that there's always so much to do.  This year was my favorite 4th of July yet :)

What I Ate: Simple Paleo Meals

I haven't done a "What I Ate" post in awhile, so I figured it was about time I got back on it!  I love creating these posts, & love reading them too.  The nosy side of me wants to know what other people are eating.... Plus, it helps me get ideas of new things I can make for myself!  

These are my meals from Sunday~ breakfast, lunch, snack, & dinner.  Everything is super simple & easy to prepare, yet tastes awesome!  I love food too much to eat like I'm "sacrificing".
Paleo does not have to taste boring!  :)

Torn spinach with a sliced up chicken apple sausage from Trader Joe's & one hard boiled egg.  Drizzled with extra virgin olive oil, sprinkled with salt & pepper, and added a dash of hot sauce.  
I had a cup of coffee, then half of this Synergy Guava Goddess Kombucha.

We keep hard boiled eggs on hand in the fridge for quick breakfasts, and pre-cook our sausages!  So, all this meal needed was 30 seconds in the microwave, & it was good to go.  I promise it is 100x tastier than it looks!

5 Minute Strawberry Jam {Paleo}

A few weeks back, my dad brought home a giant flat of local strawberries~ and I got to work being creative!  The first recipe I shared was for Strawberry Shortcake Muffins (see that recipe here).  I promised that I would be back with another simple strawberry recipe, and here I am!
