3organic free range chicken breastscut into bite-sized pieces
2/3cupcelerychopped
2/3cupcarrotschopped
1/2cupwhite oniondiced
32ozfree range chicken broth
handfulfresh parsleychopped
1tbspavocado oil(or cooking fat of choice)
1tspgarlic powder
salt and pepperto taste
Instructions
Heat the avocado oil in a large pot over medium heat.
Add the celery, carrots, and onion, and sauté until tender (about 5 minutes).
Add the chicken breast pieces and cook until they are no longer pink.
Pour the chicken broth over top, and stir in the fresh parsley, garlic powder, salt, & pepper.
Bring the mixture to a boil, cover, and reduce to a simmer.
Simmer for 15-20 minutes to let the flavors combine.
Serve, and enjoy!
Notes
Just a tip: I bought the "mirepoix" mixture (celery, carrots, onion) from Trader Joe's that was already chopped and ready to go... saved me a whole lotta work ;)
