Simplified Seafood Stew (Cioppino)

Ingredients

  • 1 tbsp virgin olive oil
  • 1/4 cup red onion or shallot, finely chopped (I used 1/4 of a red onion)
  • 1 tsp chopped garlic
  • 14.5 oz can diced tomatoes
  • 2 cups water
  • 1 tsp Italian seasoning blend
  • 1/2 tsp paprika
  • 1/4 tsp red pepper flakes
  • 1 lb seafood blend thawed (I used the frozen blend from Trader Joe's with shrimp, calamari, & scallops)
  • small handful fresh basil roughly chopped
  • salt and pepper to taste

Instructions

  • In a large pot over medium-high heat, heat the olive oil and onion until the onion begins to soften (about 2 minutes).  
  • Add the garlic, tomatoes, spices, and water and bring to a low boil.
  • Stir in the seafood, and cover for 3-5 minutes or until the shrimp are pink and the seafood is just cooked.
  • Stir in the basil and season with salt & pepper to taste.  The amount of salt needed will depend on the type of seafood you use, and whether your tomatoes are salted.  Taste it as you go!
  • Serve hot & enjoy!

Notes

*Makes four hearty bowls of stew.
