1/4cupred onionor shallot, finely chopped (I used 1/4 of a red onion)
1tspchopped garlic
14.5ozcan diced tomatoes
2cupswater
1tspItalian seasoning blend
1/2tsppaprika
1/4tspred pepper flakes
1lbseafood blendthawed (I used the frozen blend from Trader Joe's with shrimp, calamari, & scallops)
small handful fresh basilroughly chopped
salt and pepperto taste
Instructions
In a large pot over medium-high heat, heat the olive oil and onion until the onion begins to soften (about 2 minutes).
Add the garlic, tomatoes, spices, and water and bring to a low boil.
Stir in the seafood, and cover for 3-5 minutes or until the shrimp are pink and the seafood is just cooked.
Stir in the basil and season with salt & pepper to taste. The amount of salt needed will depend on the type of seafood you use, and whether your tomatoes are salted. Taste it as you go!
