Slow Cooker Texas Chili Soup

Ingredients

  • 1 lb beef stew meat
  • 2 tbsp tomato paste
  • 32 oz beef bone broth
  • 1/2 white onion roughly chopped
  • 1 tsp garlic minced
  • 1 jalapeno seeded & minced
  • 2 tbsp chili powder
  • 2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 15 oz can tomato sauce
  • 14.5 oz can diced tomatoes

Instructions

  • Prep the veggies by chopping the onion, and mincing the garlic and jalapeño.
  • In a large skillet over medium-high heat, sear the stew meat on all sides.  This should only take a couple of minutes, as the meat does not need to cook through.
  • Add all of the ingredients to a slow cooker, and stir to combine.
  • Cook on "high" for 4 hours, or "low" for 6 to 8 hours.
