Green Eggs & Ham Breakfast Bake

- 8-10 large eggs
- 1/2 cup coconut milk (or other milk of your choice)
- 1 tbsp green powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- handful spinach, chopped
- 1/4 sweet onion, chopped
- 4 oz (about 8 slices) ham, chopped
- 2 slices fully cooked bacon, chopped
Preheat the oven to 350ºF. Line a 8 or 9" square baking dish with parchment paper, or grease with a cooking fat of your choice.
In a large bowl, whisk the eggs, then stir in the coconut milk, greens powder, and spices until mixed well.
Stir in the chopped spinach, onion, and ham. Pour the mixture into the baking dish, and top with chopped bacon.
Bake at 350ºF for about 40 minutes, or until the eggs are set. Slice & serve hot!
