Cookie Dough Fudge Bars | Paleo

- 1/3 cup ghee
- 2 cups raw cashew pieces soaked in water for 2+ hours
- 1/4 cup honey or maple syrup
- 3 tbsp coconut flour
- 1 tsp vanilla extract
- 1/2 tsp sea salt
- 2/3 cup Paleo-friendly chocolate chips
Line an 8" square baking dish with parchment paper. Set aside.
To a food processor or high speed blender, add all of the ingredients except the chocolate chips, pulsing until super smooth.
Transfer the "cookie dough" to a bowl, and stir in the chocolate chips. Give it a taste, and add additional sweetener or sea salt to your preference.
Scoop the dough into the lined dish, smoothing over the top. Transfer to the freezer, chilling until firm.
Enjoy from the freezer, thawing each serving for a few minutes before you dig in!
