Cookie Dough Fudge Bars | Paleo

Ingredients

  • 1/3 cup ghee
  • 2 cups raw cashew pieces soaked in water for 2+ hours
  • 1/4 cup honey or maple syrup
  • 3 tbsp coconut flour
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 2/3 cup Paleo-friendly chocolate chips

Instructions

  • Line an 8" square baking dish with parchment paper.  Set aside.
  • To a food processor or high speed blender, add all of the ingredients except the chocolate chips, pulsing until super smooth.
  • Transfer the "cookie dough" to a bowl, and stir in the chocolate chips.  Give it a taste, and add additional sweetener or sea salt to your preference.
  • Scoop the dough into the lined dish, smoothing over the top.  Transfer to the freezer, chilling until firm.
  • Enjoy from the freezer, thawing each serving for a few minutes before you dig in!
