Beef, Sweet Potato, & Apple Breakfast Hash | PALEO, Whole30

Ingredients

  • 1 lb ground beef
  • 2 tbsp cooking fat
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp red pepper flakes
  • 1/2 tsp chili powder
  • 1/2 tsp oregano
  • 1/2 tsp garlic
  • 1/2 tsp cinnamon
  • 1 sweet potato diced into 1/4" to 1/2" pieces
  • 1 apple, diced (I like "Pink Lady" but Granny Smith would be tasty too!)
  • 1/2 onion, chopped
  • 1/4 cup chopped pecans
  • 1/4 cup orange juice or apple juice
  • 1 tbsp apple cider vinegar
  • 1 cup baby spinach

Instructions

  • In a large skillet, heat the cooking fat over medium-high.  Add the ground beef, breaking it apart with a wooden spoon and cooking for 3 to 4 minutes.
  • Add the onion, sweet potato, apple, pecans, and spices.  Sauté until the beef is fully cooked and sweet potatoes are tender.
  • Pour in the juice & apple cider vinegar, and add the spinach.  Stir to scrape any browned bits off the bottom of the pan.  Cook until the spinach is wilted, just a few minutes.
  • Serve hot with a fried egg on top, or all on its own!
