Beef, Sweet Potato, & Apple Breakfast Hash | PALEO, Whole30

- 1 lb ground beef
- 2 tbsp cooking fat
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp red pepper flakes
- 1/2 tsp chili powder
- 1/2 tsp oregano
- 1/2 tsp garlic
- 1/2 tsp cinnamon
- 1 sweet potato diced into 1/4" to 1/2" pieces
- 1 apple, diced (I like "Pink Lady" but Granny Smith would be tasty too!)
- 1/2 onion, chopped
- 1/4 cup chopped pecans
- 1/4 cup orange juice or apple juice
- 1 tbsp apple cider vinegar
- 1 cup baby spinach
In a large skillet, heat the cooking fat over medium-high. Add the ground beef, breaking it apart with a wooden spoon and cooking for 3 to 4 minutes.
Add the onion, sweet potato, apple, pecans, and spices. Sauté until the beef is fully cooked and sweet potatoes are tender.
Pour in the juice & apple cider vinegar, and add the spinach. Stir to scrape any browned bits off the bottom of the pan. Cook until the spinach is wilted, just a few minutes.
Serve hot with a fried egg on top, or all on its own!
