Shrimp Ceviche Guacamole | Whole30, Paleo

Ingredients

lb
wild caught shrimp,
fully cooked & chopped into bite sized pieces
1 1/2
ripe avocados
1
large lime (juice)
handful
cilantro leaves, chopped
pinch
salt to taste
1/4
cup
red onion, finely diced
1/2
jalapeno,
seeds removed & finely diced
1/2
cup
salsa verde
1/2
cup
baby tomatoes chopped
Instructions
Add the avocados and lime juice to a bowl and mash to your preferred guac consistency (you could even blend if you like it super smooth).
Stir in the salsa verde, red onion, tomatoes, jalapeño, shrimp, and cilantro. Add salt to taste.
Serve chilled.
Notes
Try this served as a dip with chips or sliced veggies, or serve it as an entree- scooped over salad greens or into a taco shell.
