Banana Oat Blender Muffins

Ingredients

  • 2 ripe bananas
  • 3 large eggs
  • 1/2 cup rolled oats
  • 1/4 cup peanut butter
  • 1 tsp cinnamon
  • 1 tsp vanilla

Instructions

  • Preheat the oven to 350ºF.  Line a muffin tin with parchment paper cups or use silicone cups like these which also work freestanding on a baking sheet.
  • Add all of the ingredients to a blender and pulse until smooth.  Pour into 10 muffin cups and top with a few extra oats if you like.
  • Transfer to the oven and bake until set, about 15 to 20 minutes (18 works perfect for my oven).

Notes

You can substitute any nut butter for the peanut butter, or sunbutter if you don't eat nuts.
Mix-in ideas:  blueberries, chopped walnuts or pecans, shredded coconut, chocolate chips, extra cinnamon & a handful of raisins
Make green "hulk muffins" by adding in a cup of fresh spinach to the batter, and sneak in some extra iron.
