Creamy Ranch Cauliflower Risotto

This Creamy Ranch Cauliflower Risotto comes together in just minutes, and is an easy dairy free dish you can add to so many meals!
Servings: 4 as a side dish

Ingredients

  • 1 Tbsp ghee
  • 12 oz cauliflower rice fresh or frozen
  • 1/4 cup coconut milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried chives
  • 1/2 tsp dried dill
  • salt & pepper to taste
  • chopped fresh parsley or chives optional garnish
  • 1/4 cup ranch dressing optional

Instructions

  • In a medium saucepan, heat the ghee over medium heat until melted. Add the cauliflower rice and sauté for about 3 minutes to get it cooking.
  • Stir in the coconut milk, herbs, and spices, and simmer until the cauliflower is fully cooked and liquid is absorbed, about 5 to 7 more minutes.
  • Drizzle with ranch (if using) and garnish with fresh herbs. Add additional seasonings to taste. Enjoy!

Notes

Fresh or frozen cauliflower rice will work the same! Frozen may just need a minute or two longer to cook.
Not a fan of coconut milk? Allergic? You can substitute any milk that works for you. This recipe is really flexible.
My "Ranch Seasoning" blend in the recipe below is so good on roasted veggies, potatoes, or in an egg bake or scramble! Make extra while you've got the herbs & spices out and store some in a little jar!
