Cookie Dough Fudge Bars | Paleo

"School's out for the summer...."  "School's out...."  okay, that's all I know from that song.  But it's fitting, and ringing through my mind, because guess what?  School is out.  You guessed it - for the summer!

I just finished my first school year with a new district (I'm a speech therapist by day) and am so excited!  The year was filled with challenges and so much learning as I went, but it was a really good year.  I am so thankful for a great job working with kids that make me laugh every day.  And another big take away?  High schoolers aren't as scary as they look or seem.  They're actually so fun to work with, and I can't wait to jump back in for round 2 in August!

But, not so fast... it's time to enjoy the summer first!  Summertime to me means days by the pool, trips to the farmer's market, time to visit my family & catch up with friends, and SO much more time to get up all of the recipes I love making & sharing with you all.

And the first one up for the summer is perfectly fitting, because it's what I ate in celebration of the school year coming to a close.  (Which is another beauty of this dessert - because although I made this a couple of weeks ago, there are still pieces hanging out waiting for me in the freezer whenever I'm ready to thaw & indulge!)

These cookie dough fudge bars are everything I want in a celebratory treat (even if it's just a Wednesday night I'm celebrating...)  They're clean, filling, creamy smooth, and just sweet enough.  And with buttery ghee & Paleo-friendly chocolate chips (I've been loving these from Equal Exchange lately, found at Target) they taste just like chocolate chip cookie dough ~ without any raw egg to make you feel bad.

Whip up a batch of these & enjoy!  They are a crowd pleaser for sure, because who doesn't love cookie dough!?  Hope you love 'em!


  • 1/3 cup ghee
  • 2 cups raw cashew pieces, soaked in water for 2+ hours
  • 1/4 cup honey or maple syrup
  • 3 Tbsp coconut flour
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 2/3 cup Paleo-friendly chocolate chips 


  1. Line an 8" square baking dish with parchment paper.  Set aside.
  2. To a food processor or high speed blender, add all of the ingredients except the chocolate chips, pulsing until super smooth.  
  3. Transfer the "cookie dough" to a bowl, and stir in the chocolate chips.  Give it a taste, and add additional sweetener or sea salt to your preference.
  4. Scoop the dough into the lined dish, smoothing over the top.  Transfer to the freezer, chilling until firm.
  5. Enjoy from the freezer, thawing each serving for a few minutes before you dig in!

Do you drain the water after you soak the cashews?

Yes! The soaking just softens them
