There’s something about the slow cooker that makes me feel like I’m playing the grown-up game right.  Like I’m somehow tricking the world into thinking I’ve got these amazing time management skills.  
 
“She made that great looking dinner after a 10-hour work day!?  On a Monday?”  Well… no, not really.  I just dragged myself out of bed about 10 minutes earlier than usual and plugged in the crockpot.  🙂

Which means dinner almost done before I’ve even made it home.  & Slow cooker meals also mean lunches for the next day, which is a huge blessing in my book…  Because who wants to finish cooking & cleaning dinner, just to start prepping another whole meal for lunch!?  Not me.
 
 
 
On top of the whole slow cooker easiness, I used pre-packaged (yet still clean) ingredients to keep this dish super simple yet packed with flavor.  
Now, if you’ve got time on your hands:  feel free to slice up your own veggies or create your own smokey Mexican spice blend.  This is just my simplified version to make things extra “doable” for a weeknight meal.  🙂

5 Ingredient Chicken Fajita Stew

Servings: 4

Ingredients

  • 2 lbs chicken boneless and skinless
  • 1 cup salsa
  • 14 oz package Trader Joe's "Fire Roaster Peppers and Onions"
  • 2 cups chicken broth or water
  • 1 tbsp Kouzini Picante Sweet Chipotle" spice blend
  • pinch salt & pepper

Instructions

  • Add the chicken to the bottom of a slow cooker and cover with salsa.  Cook on "low" for 6-8 hours.
  • Use two forks to break up the chicken into bite-sized shreds.
  • Stir in the pepper & onion mixture, chicken broth, and spices, and cook for an additional 30 minutes on "high".  Feel free to add more liquid to your preference.
  • Serve hot, topped with avocado or cilantro, or just as it is!  Enjoy!

Notes

  • I used 1 lb of chicken breasts, 1 lb of thighs.  You could use whatever cut you like!
  • Either red or green salsa will work great!  I used green in the pictures above.
  • Chicken bone broth is our favorite nutrient-dense ingredient~  but water makes a great substitute if you’re in a pinch and don’t have any broth on hand.
  • Although I love & recommend the Kouzini spices, feel free to substitute any Mexican or chipotle spice blend you have on hand.  You could also combine a mixture of cumin, paprika, and chili powder to make your own.
