Snickerdoodle Cheesecake Blondie Bars (Paleo)

Some days I have a lot on my mind & an endless to-do list, and a "food is fuel" mentality.  I prep breakfast & lunch, make a simple, nutritious dinner, and do minimal snacking.  I drink a lot of water & take all of my supplements.  

Other days, I think about food.  All.  Day.  Long.  


"How long ago was breakfast?  It feels like hours ago, I'm starving."  
"Is 10:30 too early to eat my packed lunch?"
"Okay, I'm all out of food.  Gotta go home now."
"This whole bag of plantain chips is basically just one serving, right?"  etc., etc.

Most mornings, I like my breakfast prepped, easy, and in my stomach in 10 minutes or less (closer to 5 minutes, actually).  Other mornings, I'll spend an hour whisking & mixing & waiting for puffed up golden brown perfection...  Anyone else?

Chicken Fajita Poppers | Paleo, Whole30


With football playoffs & the Super Bowl coming up, my mind has continued to drift towards finger foods.

You know, the kind that you can mindlessly inhale while you chat & do your best to follow the big game?  Luckily, these are packed with simple, good-for-you ingredients that won't leave you with as much of a gut-ache, had you scarfed down a giant bowl of nachos.

Because as good as that feels in the moment, we all know hindsight is 20/20.


I call these "Chicken Fajita Poppers"... poppers because they *pop* while they're cooking, and they're the perfect bite size to pop right in your mouth.  The flavor is also amazing.... which gives them yet another "pop" factor!

And while these are perfect for game day, they also make the ultimate meal prep food.  Bake a batch on Sunday, then mix & match them with meals throughout the week.  They're great over a Mexican-style salad, in a cauli-rice burrito bowl topped with salsa & guac, or snacked on solo after a workout.


Don't be intimidated by these ~ I promise you they are SO easy to make!  Just break up some chicken in the food processor (much simpler than it sounds, takes just a few seconds), then pulse in the veggies and spices.  Scoop onto a lined sheet, and bake.  That's it!

You're on your way to a fajita fiesta in no time, with a no-fuss method and super easy clean-up.

As far as the chicken goes, you could also go for ground chicken, then omit the food processor all together.  I like to break up my own so I can choose what quality of chicken I'm grinding - and I also like to make sure it's thighs, which are more flavorful.  The choice is yours, and I'm sure they will be delicious little party bites either way!


I hope you love these as much as we did!  They are perfect dipped in some salsa, guacamole, or "Paleo ranch" - a meaty substitute for chips!



Makes 25 bite-sized poppers.
Ingredients:
  • 1 lb boneless, skinless chicken thighs
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 onion, diced
  • 1 tsp minced garlic
  • 1/2 tsp each:  chili powder, paprika, cumin, oregano, salt, pepper
  • 1/4 tsp cayenne pepper (optional)
  • avocado oil, for cooking*

Directions:
  1. Preheat the oven to 400ºF.  Line a baking sheet with parchment paper or foil, and drizzle or spray with avocado oil.
  2. Pat the chicken dry with paper towels, then place in a blender or food processor.  Pulse a few times to break up the meat.
  3. Add the remaining ingredients (peppers, onion, garlic, spices) and pulse for a minute or two, until everything is combined.
  4. Use a cookie dough scooper to scoop heaping tablespoons full of the mixture onto the lined and greased baking sheet.*  You can leave them as is, or use your hands to flatten them a bit.
  5. Brush the tops of the poppers with avocado oil, or use a sprayer to lightly coat them.  
  6. Transfer to the oven, and bake for 25 minutes.  Broil for 3-5 minutes at the end to brown the tops.
  7. Serve hot, dipped in guacamole or salsa!


*Notes:
  • If you don't have avocado oil, use whatever oil you have on hand.
  • Cook the poppers in batches if you can't fit them all on one baking sheet.
  • If you don't have a cookie dough scooper, use a tablespoon measuring cup to scoop instead.

Fruit & Nut Bites: Apricot Macadamia


Apricots grow really well in my home town, which means they're always easy to find.  That also means I'm very picky about them!

I like more of a sweet/tart-flavored apricot (Blenheim is my favorite), while I know some prefer the all-sweet variety.  Whichever kind floats your boat, you've got to try them like this.  Combined with roasted, salted macadamias, sweet coconut, and creamy coconut oil, they taste like little bites of sunshine.

Some of my favorite Sundays are for dreaming up new recipes, binge-watching Pretty Little Liars educational shows on Netflix, and getting out of my pj's around noon to get in some sort of movement for the day.

Luckily, my TV is close is enough to my kitchen- and I was able to keep up with my show while turning this "Creamy Cajun Chicken" deliciousness into a reality!

Crispy Oven Green Beans | Paleo, Whole30



 I love taking an every day veggie and transforming it with super simple ingredients.  In this recipe, green beans get a crispy twist with savory seasonings and some time spent roasting in the oven - which always seems to take a vegetable's flavor up a notch.

The green beans cook up almost like "fries" - tender on the inside, but crunchy and crisp on the outside.  Perfect for snacking and excellent as a simple side, these green beans have remained a go-to recipe for us for years.
