Shrimp Egg Roll Bowls

I'm going to keep things simple today:  If you like egg rolls, but feel bad about yourself after eating a dozen of them, you're going to love this.

It's got all of the deliciousness found on the inside of an egg roll, but pan-fried in healthy fat & eaten straight out of the bowl.  Because, who needs soy sauce & egg roll wrappers in their life, anyway?

BBQ Bacon Meatloaf

Making my own meatloaf makes me feel like a real grown-up.  Like I'm supermom (to my pets), housewife of the year (to my boyfriend)... like whipping up a family dinner is no big thing.

I guess I just love how you cannot mess up meatloaf.  It always tastes delicious, always tastes like home, and always makes the perfect leftovers for lunches.  Top it with BBQ sauce & bacon, and it's seriously taken to a whole new level!

Over the past year, we've taken our commitment to clean living to the next level-- by overhauling all of the toxic products we possibly can in our home.  Because, if we're going to put so much effort into putting all of the best foods inside of our bodies... then why cover the outside with toxic lotions & potions?  And how can we then be comfortable inhaling the suspicious chemical cocktails in cleaning products, laundry soaps, dryer sheets, and candles?

It's caused a huge shift in my thinking, and has definitely made me take a second look at all of the advertisement we are constantly being faced with:  pushing so many products that we not only don't need, but are actually harmful to us.

I've invested in some clean, all-natural household products that we can make use of in so many different ways, and can't believe the money it's saved us.  We're also left with fresher-smelling surfaces, much more cabinet space, and far fewer headaches.  In other words, we're never going back.

After nearly 24 years of life, I had never had “corned beef & cabbage”— for St. Patrick’s Day or any day for that matter.  & I wasn’t sad about it.  One-dish “pot roast” type dinners, where everything turned out looking & tasting the same with that soft mushy texture, simply did not call my name.  And the term "corned" beef just sounded plain weird.

I was in the "creating" mood, and had a ton of zucchini to use up.  The result:  "Cheesy" Zucchini Biscuits!  

The inspiration for these was my most popular recipe to date (by far)... my Cauliflower Biscuits with Bacon & JalapeƱo.  But I was craving a different flavor element this time... something cheesy.

So, I grated up plenty of zucchini, then whipped up a quick & easy "cashew cheese" in the food processor.  The combination turned out just how I imagined!  As if fried zucchini & cheesy biscuits had a baby. *swoon*

Breakfast Stuffed Sweet Potatoes

Today I'm sharing one of my favorite new breakfasts to "meal prep"... just in time for Sunday!

I microwaved the sweet potatoes to keep things quick & simple, then scooped out the insides.  Save them~ because they're perfect for a quick sweet potato mash with dinner (just add grass-fed butter & cinnamon).

The sweet potato "shells" are then ready to be stuffed with a deliciously smokey-savory breakfast scramble of chorizo sausage, eggs, and veggies.  The mix of protein and carbs makes for the perfect nutritious breakfast that will keep you full all morning.

I made a batch of these for our Sunday brunch, then wrapped each leftover potato in foil & saved them for the next couple of mornings.  All they needed was a minute in the microwave, & breakfast was done.

Crispy Coconut Salmon Bites

If you're in search of something "new" to spruce up lunch, or serve as an appetizer... look no further!

I had some leftover salmon on hand that I wanted to get creative with, and this is what I came up with:  crispy little bite-sized snackers with an Asian flare.

I pulsed up the salmon with a few other ingredients, rolled the "bites" in coconut, and quickly pan-fried them.  The result was a delicious Asian-style bite of amazing flavor!  I had some of my Pineapple Teriyaki Sauce on hand, and used that for dipping... talk about flavor overload.

I made these on a Whole30, so the ingredients are all compliant.  The sauce is as well!

Give them a try for your next BBQ or lunch get-together, or whip up a batch for just yourself!


Paleo Paella

Paella is one of my favorite one-pan meals.  It's simple, filling, and bursting with flavor... and I couldn't wait to come up with a Paleo version!

The one thing I don't always love about Paella is that it takes some prep time.  So once I got my hands on the frozen riced cauliflower from Trader Joe's, I was even more excited to make this... because it makes it that much easier!

I love the smoky heat in this dish, and how it pairs perfectly with the fresh, bright flavors from the tomatoes, lemon, and fresh herbs.  I use a combination of three meats:  chicken, chorizo, & shrimp.  You could also add mussels, scallops, or any other seafood to keep that traditional Paella vibe.

& If you're not familiar with saffron, don't be intimidated.  We bought ours from Whole Foods, and it comes in a small pouch of threads.  All you need is one pinch of those threads, stirred into this dish & left to simmer.  You'll have an amazing unique flavor & the gorgeous golden color you see in my "rice"!

Cashew Waffles with Berry "Syrup"

When Whole30 ends on a Saturday, you go big for Sunday brunch.  & Since eggs and sausage are the usuals on the breakfast menu around here... big = WAFFLES.

My goal for these was to create that delicious "waffle" flavor & texture I had been missing:  perfectly soft, thick, & fluffy;  but, I wanted it to be done with technically Whole30 compliant ingredients.

I figured this would be the best way to get that "SWYPO"/junk food fix while sticking to the ingredients that my body would appreciate.  Because while sweetening these with honey then drowning them in pure maple syrup sounded wonderful, I wasn't so sure that my body would think so.  Especially after all that time detoxing from sweets.

So I stuck to dates for my sweetener, and topped my waffle stack with a "fruit syrup"-- just berries & coconut oil.  It gave the perfectly sweet/tart, fresh balance to the light, cakey waffles~ and it was super duper easy to do.

I hope you LOVE these waffles like we did.  Try them during your "reintroduction" phase after a Whole30, or any ol' time you're in the mood for some Paleo-friendly waffle action.

Dairy-Free Spinach Pesto | Paleo, Whole30

I love the flavors of a good pesto, and how it can transform a simple dish into something delicious.  Unfortunately, finding a dairy-free option at the store can be tricky, and I don't always keep fresh basil on hand to make my own.  There are a few great versions available at Whole Foods Market, if you're interested in buying one~  but it's actually really simple to make!

All you need is a food processor, and a few simple ingredients.  Traditional pesto is done with fresh basil, pine nuts, and parmesan cheese, but of course I switched things up to make it more convenient and Paleo-friendly.

First, I swapped the basil for spinach (because we always have spinach on hand & I actually love the flavor it gives).  I then ditched the pine nuts, mainly because they're expensive and I don't feel like they're necessary.  I used cashews instead~  they give that toasty "nutty" flavor, and also serve as a great replacement for the Parmesan cheese.

Just a couple minutes of prep time, and you've got the perfect pesto that you can use in so many ways!  Spread it over chicken or fish for a burst of fresh flavor, or stir it into spaghetti squash as a "pasta sauce".  I also love what pesto does to scrambled eggs~  just mix in a tablespoon or so after cooking!

Creamy Tomato Basil Soup

I used always have cans of low-sodium, low-calorie soup on hand for quick dinners, and they became sort of a go-to.  But once I started switching over to a Paleo diet, and checking my labels with a new perspective, I realized that they weren't exactly the best bet for a nutritious meal.

I started making my own Paleo-friendly soups from scratch, but they became less of a go-to~ because they're just simply not as convenient as a can that's ready to heat & serve... and I didn't always have the time (or motivation) to "go there" for a weeknight dinner.

Enter my "Creamy Tomato Basil Soup":  my way of bringing the convenience back to soup on a Paleo or Whole30 diet.  I've made this many times now, when we're low on groceries and in a pinch, and I still can't get over how delicious & EASY it is.

Diced tomatoes, spices, coconut milk, & broth combine in the blender then heat on the stove for a creamy, luscious soup that takes just minutes to prepare.  It's really just as easy as a boxed or canned soup~ but so much cleaner!
